A Japanese Twists to Ramen Noodles

Today the boys and I had ramen noodles for lunch, but instead of the typical American styled version of plain ramen noodles mixed with meat flavored broth, I jazzed it up a bit the way the Japanese do!

I cooked the noodles according to the package meanwhile, I boiled a couple of eggs and fried some turkey ham. I then cut up some green onions for added flavor. I spooned the noodles and broth into each of our bowls, and topped it with the ham, egg, and green onion. The boys loved every bit of it! Who knew ramen noodles could be so fun?

I find that Japanese cuisine makes eating more artful so to speak. Eating a usually boring meal, becomes so much more when you do it like the Japanese. Bento lunches for instance, seem to become works of art with character faces and such, than just plain boring food.  :P

I’ve been really exhausted and or busy lately so I haven’t been able to update as often as I would like. Between dealing with my pregnancy and being a mother and trying to get things together within our home it’s been pretty draining. Anyways during all the chaos I managed to come up with this little pregnant friendly drink. I’ve been having leg cramps and I tried some different combination’s of things to find a solution. I hope you enjoy this little recipe of mine!

Virgin Tropical Sunrise

  • 1/2 cup of chilled mango nectar
  • 1/2 cup of chilled pineapple juice
  • 1/2 cup of chilled orange juice
  • 1/2 cup of chilled sparkling water or tonic water (for leg cramps)

Pour all ingredients together in a glass and stir to blend with a spoon. Enjoy!

Note: For a pretty sunset version top off with 1/4 teaspoon of grenadine. :up:

Jamaican Chicken Curry

I decided to try making some curry for dinner tonight. I was really trying to go for a Thai or Indian Curry, but after looking at sites displaying the ingredients, I was lacking a few ingredients so tonight I will make Jamaican Curry. I will be trying the other two next time I graze the grocery store. Anyways, I did a few searches on Google and when I found this video I decided to her it her way, after
all she is Jamaican, and who would know better than her?

Ingredients(that I used):

  • 5 boneless chicken breast (I hate dark meat)
  • 1/2 green pepper chopped
  • 3 green onions (scallions) chopped
  • 1 large onion chopped
  • 2 cups of water
  • 6 TBSP of curry powder (the yellow Jamaican kind is best, but I used the red Indian kind)
  • 1 TSP black pepper
  • 1 TSP salt
  • 2 TSP thyme
  • 2-3 TSP garlic powder
  • 1 1/2 TBP vegetable oil
  • 1 chicken bouillon (for extra flavor)

It smelled so good when I was cooking it and allowed the chicken to marinade, but very spicy. Overall, this dish was delicious!

White Chicken Chili Recipe

I have no idea what to write about today so I’ll share a recipe with you all. Today was quite boring actually because I slept in most of the day due to the fact that I was up until 2am doing laundry. Still 2 more loads to go, but I’m only washing one load today. Other than that all I did today was shampoo my hair with a baking soda and water rinse. I then discovered I had some buildup on my scalp and I did a brown sugar and conditioner scalp scrub. I cleaned that cheap Walmart fish tank out and put my Betta’s in a new tank. The male Betta is in his original tank, and I put the female in a glass jar I had until I can go to the pet store and get a new tank. Word to the Wise: Do not purchase pet items from Walmart!

I then took a trip to the hair store and paid for a hand dryer they forgot to charge me for the last time I was there, purchased some shea butter, and vegetable glycerin. I then went to CVS and made some wallet sized photo’s of me and Brian’s Royal Caribbean photo to send with the thank you cards. I came home and ordered some black soap online and that was pretty much my day.

Well, on with this infamous recipe of mine:

White Chicken Chili

  • 1 lb chicken breast cut into 1 inch pieces
  • 1 small can of diced green chilies
  • 1 large white onion chopped
  • 3 cups of chicken broth
  • cumin, white or black pepper, salt, to taste
  • 1/4 tsp oregano
  • 1/4 tsp garlic powder
  • mozzarella cheese and sour cream
  • 2 cans of Great Northern Beans
  • 1 tbsp butter
  • Tortilla Chips

Directions:

  1. Melt butter and saute onion in a large sauce pan.
  2. Add chicken and brown until no pink is visible.
  3. Add chicken broth, chilies, beans, garlic powder, cumin, salt, and pepper.
  4. Bring to a boil and simmer for 30 minutes.
  5. Serve topped with cheese a dollop of sour cream and tortilla chips
