White Chicken Chili Recipe
I have no idea what to write about today so I’ll share a recipe with you all. Today was quite boring actually because I slept in most of the day due to the fact that I was up until 2am doing laundry. Still 2 more loads to go, but I’m only washing one load today. Other than that all I did today was shampoo my hair with a baking soda and water rinse. I then discovered I had some buildup on my scalp and I did a brown sugar and conditioner scalp scrub. I cleaned that cheap Walmart fish tank out and put my Betta’s in a new tank. The male Betta is in his original tank, and I put the female in a glass jar I had until I can go to the pet store and get a new tank. Word to the Wise: Do not purchase pet items from Walmart!

I then took a trip to the hair store and paid for a hand dryer they forgot to charge me for the last time I was there, purchased some shea butter, and vegetable glycerin. I then went to CVS and made some wallet sized photo’s of me and Brian’s Royal Caribbean photo to send with the thank you cards. I came home and ordered some black soap online and that was pretty much my day.
Well, on with this infamous recipe of mine:
White Chicken Chili
- 1 lb chicken breast cut into 1 inch pieces
- 1 small can of diced green chilies
- 1 large white onion chopped
- 3 cups of chicken broth
- cumin, white or black pepper, salt, to taste
- 1/4 tsp oregano
- 1/4 tsp garlic powder
- mozzarella cheese and sour cream
- 2 cans of Great Northern Beans
- 1 tbsp butter
- Tortilla Chips
Directions:
- Melt butter and saute onion in a large sauce pan.
- Add chicken and brown until no pink is visible.
- Add chicken broth, chilies, beans, garlic powder, cumin, salt, and pepper.
- Bring to a boil and simmer for 30 minutes.
- Serve topped with cheese a dollop of sour cream and tortilla chips
